  • 1 tablespoon olive oil<\/li>\n
  • 1 tablespoon unsalted butter<\/li>\n
  • (550g) 2 large potatoes peeled and cut into \u00bd inch cubes<\/li>\n
  • 1 small onion diced<\/li>\n
  • 1 small red bell pepper, diced<\/li>\n
  • 2 teaspoon spring onion, chopped<\/li>\n
  • Salt and pepper to taste<\/li>\n
  • Dried thymes as needed<\/li>\n
  • 1 tablespoon crumbly cheese<\/li>\n
  • 2 eggs<\/li>\n<\/ul>\n

    <\/p>\n

    Preparation:<\/span><\/h2>\n

    <\/p>\n

      \n
    • Preheat oil in a large nonstick skillet over medium heat.<\/li>\n
    • Add potatoes, season with salt and black pepper, toss to coat with oil<\/li>\n
    • Place a lid on the pan and allow the potatoes to cook covered for 10 minutes.<\/li>\n
    • Remove the lid and increase the heat to medium high.<\/li>\n
    • Add butter, onion and bell pepper.<\/li>\n
    • Cook for 15 minutes, stirring occasionally, until the potatoes and vegetables turn golden brown.<\/li>\n
    • Season with cumin and thymes.<\/li>\n
    • Make two holes to poach 2 eggs and add some crumbly cheese.<\/li>\n
    • Sprinkle some dried thyme leaves.<\/li>\n
    • Cover with for a few minutes just enough to cook the eggs.<\/li>\n
    • Top with spring onions.Serve immediately. Enjoy!<\/li>\n<\/ul>\n

      Iftar: Cheesy Chicken and Potato Bake with White Sauce<\/strong><\/h2>\n

      Ingredients<\/span><\/strong>:<\/h2>\n

      <\/p>\n

      • (324 gram) 2 chicken breasts, cut in small dices<\/li>\n
      • (600 gram) 2-3 large potatoes, cut in half inch thick slices<\/li>\n
      • 1 teaspoon dried thyme<\/li>\n
      • 1 teaspoon salt or to taste<\/li>\n
      • 1 teaspoon pepper<\/li>\n
      • 1\/2 teaspoon paprika powder<\/li>\n
      • 1\/2 teaspoon cumin powder<\/li>\n
      • 1\/2 teaspoon garlic powder<\/li>\n
      • 1\/4 teaspoon red chili powder<\/li>\n
      • 1 tablespoon olive oil<\/li>\n
      • 1 tablespoon of vegetable oil<\/li>\n
      • 1 small onion, chopped<\/li>\n
      • 1\/2 red bell pepper, chopped<\/li>\n
      • 1\/2 yellow bell pepper, chopped<\/li>\n
      • 1\/2 green bell pepper, chopped<\/li>\n
      • 2 tablespoons of tomato sauce or tomato paste<\/li>\n
      • (45 gram) 1 tbsp of butter<\/li>\n
      • 1 tablespoon flour<\/li>\n
      • 400 milliliter milk<\/li>\n
      • 1\/2 teaspoon dried oregano leaves<\/li>\n
      • Dried basil leaves for topping<\/li>\n
      • 1\/2 cup mozzarella cheese, shredded<\/li>\n
      • 1\/4 cup cheddar cheese, shredded<\/li>\n<\/ul>\n

        Preparation:<\/span><\/h2>\n

        Baked Potatoes<\/strong><\/p>\n

        <\/p>\n

        • Preheat the oven to 330\u00b0F\/165\u00b0C.<\/li>\n
        • Add the potatoes in an oven tray. Season them with dried thyme, salt, pepper, paprika powder and 1 tablespoon of olive oil. Make sure all of them are covered with spices and oil.<\/li>\n
        • Roast them for the next 20-30 minutes.<\/li>\n<\/ul>\n

          <\/p>\n

          Chicken<\/strong><\/p>\n

          <\/p>\n

          • Heat a tablespoon of oil in a skillet over medium heat.<\/li>\n
          • Add onions and chicken and cook it for 6-7 minutes.<\/li>\n
          • Season with cumin powder, garlic powder, red chilli powder, salt.<\/li>\n
          • Stir well until well combined then add diced bell pepper.<\/li>\n
          • Add the tomato sauce, stir, and leave it on heat for 2 more minutes.<\/li>\n<\/ul>\n

            <\/p>\n

            White Sauce<\/strong><\/p>\n

            <\/p>\n

              \n
            • Melt the butter in a skillet.<\/li>\n
            • Slowly add the flour, while vigorously whisking, so it can be absorbed into the butter.<\/li>\n
            • Gradually pour the milk and keep whisking until the sauce becomes smooth and thick.<\/li>\n
            • Season with salt, black pepper and dried oregano, and turn off the heat.\n

              Bake<\/strong><\/li>\n

            • Transfer roasted potatoes in a large casserole.<\/li>\n
            • Top them with the cooked chicken.<\/li>\n
            • Pour the sauce over the chicken.<\/li>\n
            • Sprinkle grated mozzarella and cheddar cheese.<\/li>\n
            • Top with dried basil leaves.<\/li>\n
            • Slide the tray into the oven for the next 10-15 minutes or until the cheese is golden and bubbly.<\/li>\n<\/ul>\n
