Suhoor: Zaatar and Cheese Muffins<\/strong><\/h2>\n

Ingredients<\/span><\/strong>:<\/h2>\n

  • 5 eggs<\/li>\n
  • 1\/2 <\/strong>cup canola oil<\/li>\n
  • 1\/2 <\/strong>cup olive oil<\/li>\n
  • 25 gram melted butter<\/li>\n
  • 1 cup yogurt<\/li>\n
  • 400 gram feta crumbled<\/li>\n
  • 125 gram halloumi cheese diced<\/li>\n
  • 1\/2 <\/strong>cup mint leaves shredded<\/li>\n
  • 1\/4 cup chives chopped<\/li>\n
  • 1 tablespoon zaatar<\/li>\n
  • 1 tablespoon chia seeds<\/li>\n
  • 1 teaspoon dry mint<\/li>\n
  • Black pepper<\/li>\n
  • 1\/2 <\/strong>teaspoon chilli flakes<\/li>\n
  • 3 cups self-raising flour sifted<\/li>\n
  • 1 teaspoon baking powder<\/li>\n<\/ul>\n

    Preparation<\/span>:<\/h2>\n

    <\/p>\n

    • Preheat oven to 180\u00b0.<\/li>\n
    • Whisk eggs and add all ingredients except for the flour and baking powder. Mix well.<\/li>\n
    • Add flour and baking powder, and fold in until the dry and wet ingredients are well combined.<\/li>\n
    • Spoon the mixture into prepared muffin tin. This dish is meant to be rustic, do not flatten the mixture once poured into the tin.<\/li>\n
    • Rest for ten minutes and then bake in preheated oven for approximately 20 minutes or until cooked through.<\/li>\n<\/ul>\n

      Iftar: Musakhan Chicken Style Pie<\/strong><\/h2>\n

      Ingredients<\/span><\/strong>:<\/h2>\n

      <\/p>\n

        \n
      • 1 chicken cut into \u00bc<\/li>\n
      • 1 tablespoon yogurt<\/li>\n
      • 1 teaspoon cumin<\/li>\n
      • Lemon zest<\/li>\n
      • 1\/4 <\/strong>cup olive oil<\/li>\n
      • 4 medium onions diced<\/li>\n
      • 3 teaspoons sumac<\/li>\n
      • 1 teaspoon Bharat\/Allspice<\/li>\n
      • 1 teaspoon chilli flakes<\/li>\n
      • Salt to season<\/li>\n
      • 2-3 ready-made puff pastry sheets (thawed)<\/li>\n
      • 4 large potatoes<\/li>\n
      • 50 gram unsalted butter<\/li>\n
      • 1\/3 cup milk<\/li>\n
      • 1 tablespoon black sesame seeds<\/li>\n
      • 4 tablespoons olive oil (extra)<\/li>\n<\/ul>\n

        Preparation<\/span>:<\/h2>\n

        <\/p>\n

        Musakhan Chicken<\/strong><\/p>\n

        <\/p>\n

          \n
        • Preheat oven to 180\u00b0C<\/li>\n
        • Place the yogurt, cumin, and lemon zest in a large mixing bowl.<\/li>\n
        • Season the chicken with salt and pepper.<\/li>\n
        • Pour over the yogurt mixture and combine well.<\/li>\n
        • Arrange the chicken skin-side up in a baking dish.\u00a0<\/li>\n
        • Roast in preheated oven for approximately 30-35 minutes or until cooked through.<\/li>\n
        • Remove, shred, and set aside.<\/li>\n
        • Meanwhile, place the oil in a frying pan, saut\u00e9 onions on medium heat for approximately 10 minutes, stirring from time to time, until the onions soften and are lightly golden but not caramelised.<\/li>\n
        • Remove from heat, add the sumac, bharat, and chilli.\u00a0 Mix well.<\/li>\n
        • Combine the onion mixture with the shredded chicken.<\/li>\n<\/ul>\n

          <\/p>\n

          Mashed Potatoes<\/strong><\/p>\n

          <\/p>\n

          • Cut the potatoes in large chunks and cook in boiling salted water until tender and soft.<\/li>\n
          • In a small saucepan heat, place the butter and milk over low heat until butter is melted. Blend the buttery milk mixture with the cooked potatoes and mash until smooth and creamy.<\/li>\n
          • Season with salt and pepper.<\/li>\n<\/ul>\n

            <\/p>\n

            Pastry Filling<\/strong><\/p>\n

            <\/p>\n

              \n
            • Grease the pan’s base and sides to line a 26-centimeter springform tin with puff pastry.<\/li>\n
            • Place your springform tin over the pastry sheet and cut around the base.<\/li>\n
            • Place the round pastry sheet inside the tin.<\/li>\n
            • With the second pastry sheet, cut a long strip as wide as the rim of the tin and, place it around the edge of the pie tin.<\/li>\n
            • Gently press the edges of the base and rim together with your fingers to seal.\u00a0<\/li>\n
            • Spoon the filling into the pie tin.<\/li>\n
            • Top with mashed potatoes, and sprinkle with black sesame.<\/li>\n
            • Drizzle with extra olive oil and bake in preheated oven for approximately 40 minutes or until the pastry is cooked and golden in colour.\n

              Serve.<\/li>\n<\/ul>\n
